Cream of Spinach and Asparagus Soup - the perfect last minute Easter entree!

Happy Easter a day early! Is anyone hosting dinner tomorrow and still need to come up with an entree? I made this soup earlier this week and it made my day! It was so delicious and perfect in every way.

I'm a firm believer in all things fresh and when I saw this soup, it struck a chord with me! Not only did it look so super good, but I had every ingredient that it called for! This scrumptious soup combines fresh asparagus and spinach with a creamy base that makes you reach for seconds in no time. The only thing that I would have done different is made it a double batch:)

Another plus about this fabulous entree is it literally comes together in 15 min. which is a huge star in my book! You could also make it a meal with a slice of crusty bread, a crisp salad and some sweet, fresh fruit.

I found this rustic serving tray to be the ideal piece to serve this fantastic soup on. It was large enough to properly hold the soup bowls without taking up half the table. The sturdy handles give great control when it comes to transporting the tray.
